Coconut Meringue Pie


Ingredients

blind-baked pie shell 1   ea
granulated sugar 1/2   c
cornstarch 1/4   c
milk 2 1/2   c
eggs 3   ea
butter at room temp 2   TBSP
coconut flakes 1/2   c
vanilla 1   tsp
cream of tartar 1/4   tsp
granulated sugar 4 1/2   tsp


Instructions

1) Mix 1/2 cup sugar and cornstarch in a medium pan, stirring in milk. Cook over medium heat until mixture coats a spoon thickly.

2) Separate the eggs, reserving the whites for meringue.

3) Beat the egg yolks lightly and stir in a small portion of the hot liquid to warm the yolks. Pour the yolk mixture into the rest of the pudding mixture, stirring until it has the thickness of mayonnaise.

4) Remove from heat and blend in butter, 3/4 of coconut, and vanilla. Allow to cool slightly. Pour into pie shell and let cool.

5) For meringue: Combine egg whites, cream of tartar, 4 1/2 tsp granulated sugar, and a few grains of salt in a mixing bowl. Beat with an electric mixer until stiff peaks form.

6) Spread meringue onto pie. Place in 350-degree oven, and bake until meringue is golden brown.
